Chicken Kaddu Curry or Loki Chicken Curry is a very light and nutritious dish. You can eat it with roti or even with rice. Following is the recipe.
1 big loki,
⅓ of a chicken,
4 to 5 green chilies,
⅔ cup oil,
1 tbsp salt,
1 tbsp coriander powder,
⅓ tsp turmeric powder,
½ red chili flakes,
½ tsp garm masala,
½ tbsp ginger-garlic paste,
⅔ tsp cumin seeds,
2 tbsp white vinegar,
3½ glass water.
Take a pressure cooker, pour the oil in it. Then add thinly sliced onions and fry them until golden brown. Now add ginger-garlic paste and again fry. When light golden color is achieved, add tomatoes in it. Now cover the lid and let it cook for 5 minutes on medium low heat.
After 5 minutes, check the tomatoes if they are done, crush them well with the ladle. You need to make a puree out of it, so crush it well but be careful of the oil splashes. When the puree is formed, add chicken and white vinegar into it and fry it well. Now add all the spices and fry again for about 2 to 3 minutes. Now add loki into it, stir gently for 2 minutes, add 3½ glasses of water and cover the lid. When the weight of the pressure cooker starts moving, give 7 to 8 minutes. Open the pressure cooker and dish out. Garnish with fresh parsley leaves and green chillies and serve 🙂
Fry the chicken well, so that there is no smell of raw chicken in the curry.
If you are eating it with a tandoori naan, we suggest to keep the curry a bit thin. The naan will absorb the curry and the taste will be amazing.
Spices and salts can be adjusted according to one’s own taste.
